香濃雞蛋奶油麵包捲

2 將所有乾性材料, 除了奶油外, 全部放入攪拌盆中

3 再倒入牛奶

4 加入約150g的雞蛋

5 繼續攪拌成為無粉粒狀態又不黏手的麵團, 將回溫至室溫的奶油加入與麵糰混合均勻

7 攪打至麵團可以撐出薄膜即可

8 將麵團光滑面翻折出滾圓, 收口捏緊朝下放入盆中

9 在麵糰表面噴一些水來避免麵糰乾燥

10 蓋上濕的布

11 將麵團放入密閉的保麗龍盒中進行第一次發酵60分鐘, 發酵60分鐘至2倍大

12 麵團中的空氣用手壓下去擠出, 再將麵團秤總重平均分成8塊

13 用手捏成圓形

14 蓋上濕布休息15分鐘

15 進行整麵, 先壓扁,用桿麵棍擀成橢圓長形

16 從一側慢慢捲起來

17 放到有烘培烤紙的烤盤上, 表面噴些水

18 放入保麗龍盒中,進行第二次發酵50分鐘

19 在發好的麵糰表面輕輕刷上一層蛋黃液

21 放入已經預熱到170℃的烤箱中烘烤25分鐘到表面呈現金黃色
